WHere is a simplified version of a drink found on our latest menu. This is a batch premix that is bursting with flavours of a festive period, which makes it perfect for a festive gathering. Save the extra cordial you can use for brunch beverages, desserts, or for another batch of this cocktail.
The Bikini Cocktail
Yields 10 guests
For the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Cocktail (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Combine the listed items in a saucepan, bring to a simmer, stirring until the sugar dissolves. Next, remove from the burner allowing it to cool down fully. Pour to a clean bottle, cap it and refrigerate it in the refrigerator, it will last for about four weeks.
To make Batch Mix: Combine all the liquids in a large bottle, let it rest for 60 minutes, then pass it through best through cheesecloth, making it completely strained.
To serve: Measure 85ml of the batch mix into a stirring glass containing ice, and stir carefully for one minute to chill. Pour into an chilled martini glass or similar, garnish with the cranberries and complete it with a quick spritz with the mandarin essence over the drink.
